Ostrich Sausage with Red Onions and Bean & Feta Cream

Ingredients

For 4 people


Move the slider to change the portion size:
  • 4 Small to Medium Red Onions, Cut Into 5mm Thick Rounds
  • 500 grams Klein Karoo Ostrich Sausage
  • 30 mL Red Wine Vinegar
  • 15 mL Brown Sugar
  • 1 x 400 gr can cannelini beans, rinsed and drained
  • 100 grams greek feta cheese
  • 10 mL Dijon mustard
  • 1 clove(s) garlic, crushed
  • 30 mL olive oil
  • 30 mL lemon juice
  • 30 mL finely chopped flat leaf parsley

Directions

Method:

  1. Panfry or braai the sausage to your liking.
  2. Place onion rounds with the rest of the ingredients in a shallow frying pan over a medium heat.
  3. Fry until all of the liquid has evaporated, turning only once.
  4. Serve the onion with sausage, and the bean and feta cream.

For the Bean & Feta Cream

Please note: These quantities will vary accordingly if you adjust the number of people to be served in the ingredients section above.

  • 400g can cannelini beans, rinsed, drained
  • 100g Greek feta cheese, crumbled
  • 10ml Dijon mustard
  • 1 clove of garlic, crushed
  • 30ml olive oil
  • 30ml lemon juice
  • 30ml finely chopped flat-leaf parsley

Method:

  1. Combine all of the ingredients, except the parsley, in a food processor.
  2. Add parsley and season.
  3. Will keep well in fridge in an airtight container for up to three days.
