Ostrich Sausage with Balsamic Reduction and Bread Salad

Ingredients

For 4 people

  • 500 grams Klein Karoo Ostrich Sausage
  • 2 Spring Onions
  • 2 Medium Tomatoes, Roughly Chopped
  • 30 mL Balsamic Reduction
  • 1 baby cos salad
  • 2 spring onions, roughly chopped
  • 2 medium tomatoes
  • 2 small cucumbers, halved, sliced diagonally
  • 6 radishes, cut into small wedges
  • 1 cup(s) firmly packed parsley, torn
  • 1 cup(s) firmly packed mint, torn
  • 1 pita bread, toasted or fried, broken into pieces
  • 1 clove(s) of garlic, crushed
  • 30 mL lemon juice
  • 45 mL Olive oil
  • 5 mL honey
  • 3 mL freshly ground Black pepper

Directions

Method:

  1. Panfry sausage to your liking.
  2. Add two tablespoons balsamic reduction to the pan and heat through.
  3. Serve the sausage with bread salad.

For the Bread Salad (Fattouch)

  1. 1 baby cos lettuce, thickly shredded
  2. 2 spring onions, roughly chopped
  3. 2 medium tomatoes, roughly chopped
  4. 2 small cucumbers halved, sliced diagonally
  5. 6 radishes, cut into small wedges
  6. 1 cup firmly packed parsley, torn
  7. 1 cup firmly packed mint, torn
  8. 1 pita bread, toasted or fried, broken into pieces

Dressing:

  1. 1 clove of garlic, crushed
  2. 30ml lemon juice
  3. 45ml extra virgin olive oil
  4. 5ml honey
  5. Freshly ground black pepper to taste

 

Method:

  1. Prepare salad.
  2. Mix dressing ingredients together, pour over salad and toss.
  3. Add pita bread pieces just before serving.
