Easy Ostrich Russian and Corn Quiche

Ingredients

For 6 people

  • 3 Klein Karoo Ostrich Russians Sliced
  • 30 mL Butter
  • 1 Medium Onion Finely Chopped
  • 1 Clove of Garlic Crushed
  • 1 340g Can Of Whole Kernels Drained
  • 2 Large Eggs Lightly Beaten
  • 250 mL Fresh Cream
  • 0.25 cup(s) Feta Crumbled
  • 125 grams Low-Fat Smooth Cottage Cheese
  • 1 pinch(es) Salt and Freshly Ground Black Pepper
  • 250 grams Flour
  • 100 grams Butter Cut Into Small PIeces
  • 2 Egg Yolks Lightly Beaten with 30ml Cold Water

Directions

Method:

To make pastry:

  1. Put the flour in a bowl, add the butter, and rub together with your fingertips until the mixture resembles breadcrumbs.
  2. Cut in the beaten egg yolks with a round-bladed knife until a pastry ball forms.
  3. Turn out onto a lightly floured surface and quickly knead until the pastry is smooth, then wrap in cling film and chill for 30 minutes.
  4. Heat the oven to 180 °C.
  5. Roll out the pastry and use it to line a 30cm quiche pan. (No blind baking!)

To make the filling:

  1. Melt the butter over a medium heat and sauté the onion until tender.
  2. Add garlic and corn, and cook for 2 minutes.
  3. Season and set aside.
  4. Whisk the eggs and cream.
  5. Stir in the feta and cottage cheese. Season.
  6. Pour the egg mixture into the corn mixture and stir well.
  7. Spoon the mixture into the pastry lined pan.
  8. Arrange sliced russians on top.
  9. Bake for 35 minutes or until set and golden.
